German Carob Cake with Carob Glaze



2 C of flour (unbleached white)
2/3 C soy milk
2 Tbsp vanilla (pure)
1 C carob chips
1/2 C Earth Balance
3/4 C Fructose
1 tsp salt
2 Tbsp Featherweight baking powder

Mix milk in pot, with margarine and vanilla. Bring to a boil remove from the stove and add carob chips. Allow mixture to cool and mix with dry ingredients. Spray round cake pan (or use a cupcake pan) and bake at 350 degrees for 30 to 35 minutes. Cool on rack. For two layer cake repeat twice.

Frosting

4 T carob powder
1/2 C dates or 1/4 C honey
1/2-1 tsp vanilla (pure)
3/4 C water
1/2 C peanut butter
1/8 tsp salt

Whiz all ingredients in blender. Place in a sauce pan. Cook for 5 minutes. Chill. Spread on cupcakes or cakes.
